The Ancestor of Mortadella
In the creation of this product, the same anatomical parts used for mortadella are employed. However, the loins, ham meat, and neck fat are trimmed and cut with a knife, while the trimmings are ground. These ingredients are then thoroughly mixed with salt and spices added dry. Cooked slowly at a low temperature for at least 24 hours, the result is a healthy, extremely delicate, and pleasant salami that combines the intriguing flavor of mortadella with the delicate taste of cooked ham, making it very lean and digestible.

Pork shoulder, ham trimmings, neck fat, natural spices, and salt.
Stuffed in natural casings.
Antioxidant: Sodium ascorbate. Preservative: Sodium nitrite (except for Classic and Organic versions).

Storage Instructions

The product is vacuum-packed individually or separately based on customer request. Once opened, it is recommended to wipe the natural casing with a paper towel and remove only the portion you intend to consume, as the casing serves as a natural protection for the mortadella. If the mortadella is not used entirely, store it in the refrigerator between 2 and 6 degrees Celsius, wrapping the cut part with plastic wrap. Our products have a shelf life of 90 days in vacuum packaging. It is best to consume within 15 days of opening.
